Role Description :
Daily Kitchen Management within all areas
Recruitment - Induction – Training –Appraisals
Staff Rotas & Wage Controls
Ordering – Stock Controls - Stocktakes
Forecasting & Achieving Budgetary Controls / GP
Maintain, review and install efficient working systems / procedures and keep departmental records “up to date”
Health, Safety & Hygiene – COSHH – HACCP Risk Assessments
Meeting & exceeding guest expectations at all opportunities
Menu Compilation & Development

Experience Required :
You will be an experienced Head Chef / Senior Sous with a stable and quality 4* background and with the proven abilities to meet the above criteria.

This is a “volume” role and so your CV will need to demonstrate that you are capable of managing a busy kitchen within all areas at this high volume level

You'll be expected to navigate the kitchen brigade to a successful future, and achieve budgeted targets for food costs and stock holding levels.

It will be your responsibility to provide a menu of the highest standards with the use of approved ingredients and maintain a comprehensive hygiene programme to ensure all kitchen staff observe a good system of food preparation and storage.

You'll also be expected to take responsibility for the completion of timesheets and forecasted rotas
